Chilled Cucumber Yogurt Soup



The chilled cucumber yogurt soup is a cool and light meal that's great for hot summer days. It's creamy, tangy, and full of flavor because it's made with Greek yogurt, fresh cucumbers, and herbs. It's also easy to make and fits the keto diet!

Ingredients:

  • 2 large cucumbers, peeled, seeded, and chopped
  • 1 cup Greek yogurt
  • 1/4 cup fresh mint leaves, chopped
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional toppings: sliced cucumber, chopped mint leaves, drizzle of olive oil

Instructions:

In a blender or food processor, combine the chopped cucumbers, Greek yogurt, mint leaves, minced garlic, lemon juice, and olive oil

Blend until smooth and creamy, adding more olive oil or a splash of water if needed to reach desired consistency

Season the soup with salt and pepper to taste, and blend again to combine

Transfer the soup to a bowl or container, cover, and refrigerate for at least 1 hour to chill and allow the flavors to meld

Before serving, taste the soup and adjust seasoning if necessary

Divide the chilled cucumber yogurt soup into bowls and garnish with sliced cucumber, chopped mint leaves, and a drizzle of olive oil if desired
