A vegan take on a traditional Italian dish, tofu alla pizzaiola consists of tofu slices covered in a rich marinara sauce along with sauted onions and peppers. This is a flavorful, filling, and incredibly simple plant-based dinner that is bursting with Mediterranean flavors.
Ingredients:
- 1 block tofu, pressed and sliced
- 1 cup marinara sauce
- 1/2 cup sliced bell peppers
- 1/2 cup sliced onions
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh basil leaves for garnish
Instructions:
Set oven temperature to 375F 190C
Heat the olive oil in a skillet over medium heat
Add the garlic and saut it until aromatic
To the skillet, add the sliced onions and bell peppers
Cook for about 5 minutes, or until they start to get tender
Add the marinara sauce, salt, pepper, dried basil, and oregano
For five more minutes, simmer
Tofu slices should be put in a baking dish
Dollop the marinara mixture onto the slices of tofu
Bake for 20 to 25 minutes, or until the tofu is thoroughly heated, in a preheated oven
Before serving, garnish with fresh basil leaves
