Ingredients:
- 1 box yellow cake mix
- 1/2 cup unsalted butter, melted
- 1/2 cup chopped walnuts
- 1/2 cup honey
- 1/4 cup sugar
- 1 teaspoon ground cinnamon
- 1/2 cup finely chopped pistachios
- 1/4 cup chopped almonds
- 1/4 cup crushed honeycomb cereal
- 1/4 cup phyllo dough, finely shredded
- 1/4 cup brown sugar
- 1/4 cup water
- 1/4 cup vegetable oil
- 3 eggs
- 1/2 cup Greek yogurt
- 1 teaspoon vanilla extract
Instructions:
Preheat your oven to 350F 175C and line a cupcake pan with liners
In a mixing bowl, combine the cake mix, melted butter, and 1/4 cup of honey
Mix until well combined
Fill each cupcake liner with the cake batter, filling them about 2/3 full
In a separate bowl, mix together the chopped walnuts, sugar, and ground cinnamon
Sprinkle this mixture over the cupcake batter in each liner
Bake in the preheated oven for about 15-18 minutes or until a toothpick inserted into the center of a cupcake comes out clean
While the cupcakes are baking, prepare the syrup
In a saucepan, combine the remaining honey, water, and brown sugar
Bring to a boil, then reduce the heat and simmer for 5 minutes
Remove from heat and set aside
Once the cupcakes are done, remove them from the oven and immediately poke holes in each cupcake using a toothpick or fork
Pour the prepared honey syrup over the warm cupcakes, allowing it to soak in
Let the cupcakes cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely
In a small bowl, mix together the chopped pistachios, chopped almonds, crushed honeycomb cereal, and finely shredded phyllo dough
In another bowl, whisk together the vegetable oil, eggs, Greek yogurt, and vanilla extract
Frost each cooled cupcake with a dollop of the Greek yogurt mixture, then sprinkle the nut and phyllo mixture over the top for that Baklava-inspired finish
