These Raspberry Celebration Cupcakes are the perfect treat for any special occasion. They feature moist raspberry-infused cupcakes topped with a luxurious white chocolate ganache frosting. The fresh raspberries and optional edible gold glitter add an elegant touch, making them ideal for celebrations.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk
  • 1/2 cup fresh raspberries
  • For the White Chocolate Ganache Frosting:
  • 8 oz white chocolate chips
  • 1/2 cup heavy cream
  • 1/2 tsp vanilla extract
  • For decoration:
  • Fresh raspberries
  • Edible gold glitter optional

Instructions:

Warm up your oven to 350F 175C and put cupcake liners in a muffin tin

Mix the flour, baking powder, and salt together in a medium-sized bowl using a whisk

Put away

Put the softened butter and granulated sugar in a large bowl and mix them together until they are light and fluffy

Adding the eggs one at a time and mixing them in is the next step

Adding the dry ingredients to the wet ones one at a time, starting with the dry and ending with the milk

Don't mix any further than that

Add the fresh raspberries to the cupcake batter slowly while folding them in

Fill each cupcake liner about two thirds of the way to the top with batter

After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean

After taking the cupcakes out of the oven, let them cool for 5 minutes in the muffin tin before moving them to a wire rack to cool all the way through

For the frosting made of white chocolate ganache: Put the white chocolate chips in a bowl that can handle heat

Put the heavy cream in a small saucepan and heat it over medium-low heat until it starts to simmer

Take it off the heat right away

Place the white chocolate chips in a bowl

Pour the hot cream over them

Allow the chocolate to melt for two to three minutes

Add the vanilla extract and mix it in until it's smooth

Allow the ganache to cool for ten to fifteen minutes, or until it gets a little thicker

Once the ganache is the right consistency, put a thick layer of it on top of the cupcakes after they have cooled

Put a fresh raspberry on top of each cupcake and, if you want, sprinkle them with edible gold glitter
